Warning. This recipe is good for you. Vegan dessert. Delicious too. I made adjustments to the original recipe I found on
www.sfmarkets.com and halved the recipe. This way we have one small cake for our small family!
Healthy Chocolate Carrot Cake
1/3 cup canola oil
1/4 cup orange juice
1/2 cup sugar (or equivalent other sweetener, I used agave nectar)
3 Tbsp cocoa powder
4 oz (1/2 cup) soft silken tofu
1 1/4 cup carrots, finely grated
1 cup whole wheat flour
1 teaspoon baking soda
1/8 teaspoon salt
1/2 teaspoon cinnamon
Preheat oven to 350 degrees. Mix the oil, orange juice, sugar, cocoa powder and tofu in a blender or food processor and then add the grated carrot. In a separate bowl, mix the flour, baking soda, salt, and cinnamon. Spoon the wet ingredients into the dry and mix just until moistened. Pour batter into a greased 8x8 square pan and bake for 30 minutes or until a toothpick comes out clean. When cooled, cut into 9 squares.
Each serving has 180 calories, 9 g fat, 3 g fiber, 3 g protein
You can top it with some lite cool whip, or whatever frosting, but if you want my recipe for chocolate tofu whipped cream, here it is:
1/2 teaspoon vanilla extract
4 oz (1/2 cup) soft silken tofu
1 1/2 Tbsp cocoa powder
1/4 cup agave nectar
pinch salt
You can substitute corn syrup for the agave nectar, but you'll want to add some sugar to make it sweeter.
